Is it rude to ask what they are going to be serving if someone invites you to dinner and doesn't say what it will be?

Yes. Reminds me of a kid who stayed for dinner and only wanted an expensive pizza from a specific restaurant. You have to eat what the pot gives and may just skip a thing or say you're vegetarian or can't handle whatever, no problem, but 'what will the food be' sounds spoiled.

It's rude if the host doesn't at least give you some info of the menu they will serve. For many it is nice to join and bring a wine or a pastry to coordinate with the food. Also, the host should make sure with the invitee have no allergic or other food restrictions. Of course, if it's a huge dinner party then the host should offer several choices. But a provided menu is still nice.

You are not Dutch. We can't cook. How dare you want something else than a bunch of potatoes with vegetables and a cheese chomp. Be happy you even get something cause the others let you sit there watch them eat LOL.

What was really crazy was the stories I heard in the 90s from missionaries going to Romania or some village wherever on a mountain with these super poor people who had disgusting half rotten food. Oh a guest! Lets get some milk that is gone for 6 months or disgusting cheese with mold, they had the most disgusting stories and then they would just eat it because it was rude to say no. I just never understood that. But otherwise they are offended! Who cares? Or fake it or something, find a dog, hide it in the plant. Eeeww. Who eats that?
